@WestwoodWine has been having some fun with their cake. We asked #Winemaker Ben Cane about how it is formed and here is what he has to say, “We drain wine off the tanks and place the skins in a large basket and allow the large “foot” of the basket press to squeeze to dryness by gradual pressure increments. Instead of dumping the cake, and as we have many tiny lots, we need to dump those small amount of skins on top using the last as a base. By the end it can form a massive cake, which once the basket is removed looks like the photo – quite dry and fragrant. Excellent dance platform as it turns out!
