"Cooking with wine." To some, it means Julia Child's boeuf bourguignon; to others, it's sipping on a glass of Chardonnay while (carefully) chopping veggies. To us at Ram's Gate, we see it another way: we look at a wine as an actual ingredient in the pairing we're trying to create. Sauvignon Blanc's acidity impacts which cheese we use to finish a salad; Roberts Road Pinot Noir's earthiness directs our choice of mushrooms in a dish. And Cabernet Sauvignon? It's a wine that demands a pairing rich enough to stand up to those powerful tannins.
